Poor mans' pudding

  • 1 cup flour
  • 3/4 cup sugar (1/2 should also work)
  • 1 tbsp butter (room temperature!)
  • 1 egg (room temperature!)
  • 1 tbsp vinegar
  • 1 tsp apricot jam
  • 1 tsp bicarbonate of soda
  • 1 cup milk
  • 1/2 tsp salt
    • vla ?? to be made
  1. mix flour, salt, sugar.
  2. rub butter in.
  3. beat egg & jam together, add to flour mixture.
  4. mix milk with bicarb, then add to mixture.
  5. add vinegar and beat.
  6. bake for 30 mins at 180°C in buttered dish. (big dish!)

sauce

For pouring over pudding after baking.

  • 1 cup milk (creamy)
  • 1 cup water
  • 1 cup sugar (3/4 should also work)
  • 1 tbsp butter
  • 1 tsp vanilla essence
  • (1 tot brandy // Elizabeth’s recipe doesn’t include this!)
  1. Mix all except brandy and boil.
  2. (When boiled and slightly cooled add brandy.)
  3. Pour warm sauce onto pudding. don’t worry, it’s not too much sauce :). Or is it? :/

brandy sauce (optional)

  • 1 cup sugar
  • 1 1/2 cup water
  • cinnamon sticks
  • 1/2 tsp salt
  • 1 1/2 tsp flour in milk to thicken
  • 1 tot brandy
  1. Boil sugar, water, cinnamon and salt (5-8 min).
  2. When boiling add thickener,
  3. when finished add brandy.
