Lemon curd

Put into a pan 1/4 pound butter, 1 pound sugar, grated rind and juice of 2 lemons. Keep stirring until sugar melts. Add 6 well-beaten eggs continually stirring until mixture thickens, but DO NOT allow to boil. It is ready when the consistency of honey.
