Carrot cake

Ingredients

  • 1 cup brown sugar
  • 1,5 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda (koeksoda)
  • 1 teaspoon cinnamon
  • 1 teaspoon koekkruiden / mixed spice
  • 1 teaspoon vanilla essence
  • 2 eggs
  • Pinch of salt
  • 100g chopped nuts (walnuts work well; roughly 3/4 of nuts in cake, other 1/4 on top of icing)
  • 0,5 cup grated apple
  • 0,5 cup grated carrot
  • 0,75 cup oil

Topping:

  • 1 thing of mascarpone
  • enough icing sugar (100-200g?)

Method

  1. Beat eggs, sugar and oil
  2. Add apple and carrot
  3. Mix all dry ingredients (minus walnuts)
  4. Beat 2 minutes with wooden spoon
  5. add walnuts
  6. Pour into greased tin
  7. Bake +/-20min at 190 degrees C (18/4/2013: took about 35 minutes in convection oven at 180)

(maak van gelijke delen mascarpone en poedersuiker een mengsel dat als topping voor op de cake kan dienen. possibly add lemon/zest.)
